This is a very simple and quick recipe to make a delicious strawberry mousse, which is great for your cakes or to be served as “spoon dessert".
Soak the gelatine sheets in cold water.
Remove the stems and wash the strawberries. Whisk the strawberries and the sugar togeter in a blender (a hand blender will do too).
Take two tablespoons of the resulting juice and heat it in the microwave for a few seconds (or bain-marie). Squeeze the gelatin sheets and melt them in warm but not boiling juice. When the mixture is well mixed, incorporate the remaining blended strawberries to it.
Whisk the cream. To obtain a firm whipping cream, it is important that the cream, the bowl and the whisk are chilled. Gently add the strawberry mixture and mix from the bottom to the top so that the whipped cream holds its shape. Leave the resulting strawberry mousse in the fridge for half an hour and then use it to fill your cake or eat it with a spoon.
