Autumn means hot chocolate, steaming coffee and... pumpkin spice latte! Here is a recipe from Laura Gioia of Essenza di Vaniglia.
70 ml of espresso coffee
150ml milk (cow or vegetable)
150 g sugar
125 g water
2 tablespoons of pumpkin pulp*
1 cinnamon stick
1 teaspoon of pumpkin spice mix from pumpkin latte (nutmeg, cinnamon, cloves, ginger)
Whipped cream (optional)
To make pumpkin spice latte, start by making the syrup. In a saucepan, bring the water with the sugar to a boil over medium low heat. Then add the pumpkin puree and the spice mix. Stir well and simmer over low heat, for five minutes.
Remove the syrup from the heat, let it cool and pour it into an airtight glass jar. Store in the refrigerator.
Whip the milk with a milk whisk (or heat it to almost boiling) and meanwhile pour a tablespoon of syrup inside each shot glass, then add the espresso coffee and finally the whipped milk. To taste you may add whipped cream and a sprinkling of bitter cocoa powder. Our pumpkin spice latte shots is ready to be enjoyed!
*: you can steam the pumpkin in the microwave or in the oven, it should be soft and dry.
